We have called it Viride because that was what the ancient Romans called freshly squeezed oil. An extra virgin olive oil ideal for using raw on dishes with intense and textured flavours. Viride is the perfect dressing for seasonal vegetables, from artichokes to asparagus, but also for the great classics, such as a spaghetti with garlic and oil or a simple fresh tomato bruschetta.
